vegan tofu spread

Olive oil for frying
1/2 package 14oz firm tofu (pressed for at least 30 minutes) cut into small cubes
1/2 medium sized onion, finely chopped
2 garlic cloves, pressed or very finely chopped
1/2 apple, shredded
1/2 tsp onion powder
2 tbsp nutritional yeast
1/2 tsp turmeric powder
1/4 tsp mild madras curry powder
1/4 tsp hot madras curry powder
1 tsp dried mustard
1/2 tsp paprika powder
Approximately 1 cup vegan mayo, more or less to your own taste
2 tsp yellow mustard
Salt and freshly ground black pepper to taste
In a non-stick pan, heat the olive oil over medium flame. Add the onions and garlic and saute until soft. Make sure it does not turn brown. Remove from pan and put aside in a medium sized bowl.
In the same pan, heat some more olive oil over medium flame and add the cubed tofu. Fry until slightliy golden. Remove from pan and add it to the same bowl as the onion and garlic. Into the bowl, add the rest of the ingredients except the mayo and mustard. Let the mixture cool off for about 5 minutes in the fridge.
In another bowl mix together the mayo and mustard, then carefully add it to the tofu-mixture . Season with salt and freshly ground pepper.
Keep the spread in an airsealed containerin the fridge. It should be good for at least 4-5 days. Serve on toast with f.ex avocados, tomatoes and fresh cilantro leaves. HolyNotCow!
